Ingredients

Dough:

3 cups (about 12 3/4 oz.) all-purpose flour, plus more for work surface

3 Tbsp. granulated sugar

1 tsp. kosher salt

1/2 cup vegetable shortening, cubed

1 large egg, lightly beaten

1 cup whole buttermilk

Filling:

3 large (8 oz. each) Honeycrisp apples, peeled and chopped (about 3 cups)

1/4 cup packed light brown sugar

2 Tbsp. unsalted butter

2 tsp. cornstarch

1 tsp. grated fresh ginger

1/4 tsp. ground cinnamon

Pinch of kosher salt

1 large egg, lightly beaten

Additional Ingredients:

Canola oil, for frying

1/2 cup granulated sugar

1/2 tsp. ground cinnamon
